Nico’s Mexican Food Eindhoven opened it’s doors in 2023. Grandson Nicolas Carreon (born in San Diego) and Vera Oudejans (born in Den Bosch), are the proud owners of the first international Nico’s.
They met each other in 2018 when Vera was studying at Northern Arizona University in Flagstaff on an exchange program. ‘A mutual friend introduced us to each other because Nico had studied at my school in Breda during his summer abroad program’’- Vera. They bonded over a love of travel and our passion for hospitality. Nico’s ambition was to grow the Nico’s Mexican Food business, and Vera saw a great opportunity in the Netherlands. And so, after 4 years of traveling back and forth, familiarizing ourselves with each other’s cultures, and doing a lot of research, they opened their own Nico’s in Eindhoven.
The special thing about this Nico’s is that they make their own flour and corn tortillas fresh in-house! Other than that they add some seasonal specials such as birria and ceviche every 6 months.
Here you can dine-in and take away. This location also serves on festivals, events and other occasions.
No, we do not take reservations for groups under 10 people, you can walk in whenever you like.

Yes, our menu is a 1:1 copy from the USA. The only difference is our fresh home-made tortillas.
Totally feeling the Cali vibes with this place! I miss this food so much—it seriously reminds me of home. The people, the food, the whole vibe—it’s just perfect. Nico’s is my new spot for sure! They’ve got pickup, weekend delivery, and you can dine in too. Catch you there soon!
